Ingredients:
1 cup sugar
1 cup canned pumpkin
1/2 cup shortening or soft margarine
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/2 cup raisins, nuts, or chocolate chips
(I also like to add a tsp of vanilla)
Directions:
Preheat oven to 375 degrees
Mix sugar, pumpkin and shortening into a medium to large sized bowl.
Next, stir in flour, baking soda, baking powder, cinnamon and salt.
Then if you prefer add chocolate chips or whatever else you would like to add.
Last, drop dough in by teaspoonful onto a cookie sheet. Bake until lightly brown (approx 8 to 10 minutes)
Immediately remove from sheet and let cool!
There you have pumpkin chocolate chip cookies!
Pumpkin Cookie Glaze
Ingredients:
1/4 cup margarine
2 cups confectioner's sugar
1 tsp. vanilla
1 to 2 tblsp. milk
Directions:
Heat margarine over medium heat until delicate brown.
Stir in sugar and vanilla. Stir in milk until smooth
